I love the idea of making cakes with root vegetables; for some reason it always seems ridiculous to me that the nicest cakes are made using vegetables which you can barely taste.
The large amount of carrot gives the cake its moist texture; mixed with the taste of spices and citrus and with a cream cheese frosting, it is pretty glorious.
Ingredients
For the Cake:
300g Plain Flour
300g Caster Sugar
250g Sunflower Oil
100g Light Brown Sugar
4 Large Eggs
450g Grated Carrot
50g Crushed Walnuts
1 tsp Cinnamon
1/2 tsp Nutmeg
1/4 tsp Ground Cloves
1 1/2 tsp Baking Powder
1 tsp Bicarbonate of Soda
1 1/4 tsp Salt
2 tsp Vanilla Extract
For the Cream Frosting:
400g Mascarpone Cheese
200g Icing Sugar
1 Orange (zest only)
